Pineapple Sauce

Ingredients

  • 1 fresh pineapple
  • 3/4 cup sugar
  • 1/2 cup pineapple juice
  • 1/4 cup cider vinegar
  • 1 stick cinnamon
  • 1 pinch (1/8-teaspoon) cayenne pepper

Preparation

Step 1

In a large nonstick saucepan, combine all ingredients except the pineapple.

Bring to a boil, lower heat and simmer for 15 minutes.
Slice one pineapple from stem end to crown into quarters; cut away rind and inner core, then cut into 1/2-inch cubes.
Add to saucepan; cover and simmer 10 minutes.

Serve with ham or over ice cream or pound cake.

Makes 3 1/2 cups.
