Ingredients
- 1 box (6-ounces) cornbread mix
- 12 ounces bacon
- 1/2 cup (4-ounces) sweet pickle relish
- 1/2 cup (4-ounces) sweet pickle juice
- 3 large tomatoes chopped
- 1 large bell pepper chopped
- 1 large Vidalia onion chopped
- 1 cup (8-ounces) mayonnaise Or to taste
Preparation
Step 1
Prepare cornbread according to package directions.
Cool; crumble into very small pieces. Cook bacon, drain and crumble or chop.
In large glass bowl, layer half of cornbread, top with layer of pickle relish, juice, tomatoes, pepper, onion, bacon and 1/2 cup mayonnaise.
Repeat layers, reserving small amount of tomatoes and bacon for garnish.
Refrigerate; Serve chilled.
Note; All ingredients can be mixed together rather than layered.
