Ingredients
- 2 medium peaches
- 2 Tbsp. Vinaigrette of your choice (I used Kraft Raspberry Lite)
- 1/4 cup dried cranberries
- 4 cups of Romaine Lettuce Mix
- 2 cups spinach
- 2 Tbsp. of roasted almond slivers
- 1 green onion, sliced
- 1 whole diced medium tomato
- 1/3 cup blue cheese

Step 1
Peel and pit two peaches. Dice the peaches into bite sized pieces. Place the peaches into a lightly oiled medium sauce pan until the peaches start to caramelize (turn slightly brown and mushy).
In a large bowl add the peaches, almonds, romaine lettuce mix, diced tomatoes, blue cheese, dried cranberries, green onion, and toss with dressing until well coated.
Serve immediately. Makes 1 servings.
Serve with warm buttered bread. You can also add grilled chicken to add more protein to the salad.
