Red-Onion Relish

Ingredients

  • 1 tablespoon olive oil
  • 1 jumbo (1 pound) red onion, thinly sliced
  • 3 tablespoons sugar
  • 3 tablespoons apple cider vinegar
  • salt

Preparation

Step 1

In 12-inch nonstick skillet, heat 1 tablespoon olive oil on medium heat 1 minute.
Add sliced onion and cook 15 minutes or until very soft, stirring occasionally.
Stir in sugar, cider vinegar, and 1/4 teaspoon salt.
Reduce heat to low, simmer 5 minutes longer.
Transfer onion relish to medium bowl; cover and keep warm.
