Ingredients
- 4 medium green peppers (Flat bottoms)
- 2 tablespoons shortening optional
- 1 1/2 pounds ground beef
- 8 tablespoons onion finely chopped
- 2 tablespoons celery finely chopped
- 1/2 cup rice cooked
- 1 teaspoon salt
- 1 cup tomato juice*
- 1/2 cup cheddar cheese grated
Preparation

(*or petite cut tomatoes in tomato juice)
Wash peppers; remove stems and seeds. (If need to-carefully slice a bit off bottom to flatten WITHOUT CUTTING INTO PEPPER so pepper will sit alone.)
Boil peppers in salted water for 10 minutes. Remove, dry.
Melt shortening in frying pan; add meat, celery and onions.
Sauté until meat is brown and celery soft.
Mix in cooked rice salt and 1/2 cup tomato juice.
Fill peppers with meat mixture and sprinkle cheese on tops.
Place in greased baking pan; pour remaining tomato juice around peppers.
Bake at 350 degrees or until cheese is golden brown.
Serves 4.
