Chicken, Creamed

Ingredients

  • 6 tablespoons butter or chicken fat
  • 6 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 cups (12-ounces) seasoned Chicken broth
  • 1 cup (8-ounces) cream or milk
  • 2 cups cooked chicken, cut into pieces
  • 1/2 cup green pepper, chopped
  • 1/4 cup pimiento, chopped
  • 1 cup sliced mushrooms, sautéed
  • 2 tablespoons light wine, optional
  • 3/4 cup slivered almonds, toasted, optional

Preparation

Step 1

Melt butter or margarine and blend in flour, salt and pepper. Cook over low heat until bubbly. Remove from heat and add chicken broth and milk or cream. For richer flavor use cream. Cook until as thick as you want; stir in cooked chicken gently and remaining ingredients. Keep hot in slow-cooker. Serve over biscuits, toast points or hot cooked pastry shells.
