Chicken Puffs/Cordon Bleu

Ingredients

  • 8 medium chicken breast halves without skin boneless
  • 1 pinch salt to taste
  • 1 pinch pepper to taste
  • 5 tablespoons butter
  • 17 1/4 ounces (2 sheets) puff pastry sheets, defrosted but keep cold always
  • 8 slices sandwich ham
  • 8 slices Swiss cheese
  • Egg Wash
  • 1 large egg white
  • 2 tablespoons water

Preparation

Step 1

Place chicken breasts between waxed paper and pound to flatten to 1/4 " thick. Salt and pepper chicken. Melt 3 tablespoons margarine in medium skillet. Brown chicken 2 minutes on each side. Set aside.
On lightly floured surface, unfold the 2 puff pastry sheets. Cut each sheet lengthwise, then crosswise. You will have 8 -5" squares. Roll each square until large enough to enclose a chicken breast.
Preheat oven to 375 degrees F.
Place 1 ham slice on a pastry square, then 1 chicken breast, then a cheese slice. Brush edges with water fold and press and seal on watered edges.
Place pastry wrapped breast, seam side down on ungreased baking sheet.
Brush top with egg wash of the water and egg beaten together.
Bake 25 to 30 minutes or until puffed and golden.
Serve immediately or cool on wire racks.
