Barbecue, Down Home, Slow Cooker

Ingredients

  • 2 large onions sliced
  • 5 pounds pork*
  • 6 cloves garlic
  • 1 cup water
  • 16 ounces barbecue sauce **
  • 1 large onion chopped

Preparation

* Recipe calls for pork roast or fresh picnic ham but I use a pork loin which my family likes best.
** I use less sauce as everyone can add more when served. I also serve with the bottle of hot sauce.

OVERNIGHT COOKING:
(This is a good time to use the slow cooker liner.)

Place half of sliced onions in bottom of Slow cooker then add meat and garlic and water; add remaining sliced onions on top. Cover and cook overnight or 8-12 hours on low.

Remove from Slow cooker; remove bone (if any) and fat from meat. Put back in Slow cooker and add the chopped onion and barbecue sauce (to taste). Cover and cook additional 3-5 hours on high or 8-12 hours on low, stirring two or three times.

May serve from crock on large buns ,or plate with slaw and some pickles.

Divide and freeze remaining barbecue in small packets for future use. Freezes well.
