Ingredients
- Oreo Cookie Crust:
- Crust
- 1 1/2 1 1/2 1/2 cups chocolate wafer cookies finely crushed
- 1/3 1/3 1/3 cup butter melted
- OR Oreo Cookie Crust.
- Filling
- 1 1 1 package (8-ounces) cream cheese softened
- 1/4 1/4 1/4 cup sugar
- 1 1 1 teaspoon vanilla
- 2 2 2 large egg yolks beaten
- 6 6 6 ounces (1 cup; small bag) semisweet chocolate chips melted and cooled
- 2 2 2 large egg whites
- 1/4 1/4 1/4 cup sugar
- 1 1 to cup (8-ounces) heavy whipping cream whipped to soft peak
- 3/4 3/4 3/4 cup pecans, toasted and chopped, optional
- 1/4 1/4 1/4 cup cool liquid coffee optional
- Topping
- Whipped cream, ice cream-optional
- 16 16 16 Oreo sandwich cookies, broken into rough pieces
- 1 1 1 tablespoon sugar
- 2 2 2 tablespoons unsalted butter
- Directions
- 10 pan. Bake until fragrant and set, about 10 minutes. Let cool completely on wire rack.
Preparation
Step 1
Crust:
Combine all crust ingredients and press into the bottom of 9" spring form pan. Cook for 10 minutes at 325 degrees F. or until holds together. Do not over cook. Cool.
Filling:
With mixer, mix the cream cheese, 1/4 cup sugar and vanilla until blended. If adding coffee, add now. Stir in 2 egg yolks, add the melted and cooled chocolate.
In a separate bowl, beat the egg whites until soft peaks form, then gradually beat 1/4 cup sugar into the egg white mixture; beat until stiff peaks form; set aside.
Next gently fold the stiff egg whites into the chocolate,cream cheese mixture.
Next gently fold the whipped heavy cream into the chocolate, egg whites mixture until all is well blended.
Optional: Fold the chopped pecans now.
Pour the filling over the crumb crust.
Freeze.
Remove from freezer several minutes before cutting to serve.
Serve with a topping of whipped cream, ice cream or both.
