Mexican Wedding Cookies

Ingredients

  • 1 cup (2-sticks; 8-ounces) butter at room temperature
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons milk
  • 2 cups all-purpose flour
  • 1 cup almonds, finely chopped
  • 1/2 cup confectioner's sugar

Preparation

Step 1

Preheat oven to 325 degrees.
In a medium bowl, cream the butter and sugar.
Stir in vanilla and milk. Add the flour and almonds and mix until well blended.
Cover and chill for at least 2 hours.
Shape dough into small balls and bake for (15-20 minutes.
Let cool slightly, and roll in confectioner's sugar while still warm.
Cool completely, and roll one more time through the sugar.
