Green Bean and Bacon Salad w/Dijon Vinaigrette

Ingredients

  • 1 lb fresh green beans, ends trimmed and cut in half
  • 1/2 medium red onion, coarsely chopped
  • 1/4 + 1 TBL olive oil, divided
  • salt & pepper
  • 1 TBL Dijon mustard
  • 1 TBL honey
  • 2 tsp apple cider vinegar
  • 2 tsp minced garlic
  • 10 oz grape tomatoes halved
  • 6-8 pieces of bacon cooked and chopped
  • 1/4 cup parmesan cheese

Preparation

Step 1

Preheat over to 425. In a large bowlk toss the green beans and onion with 1 TBL olive oil and salt and pepper. Spread green beans and onions on a baking sheet. Roast for 12 minutes, stirring halfway through. Cool for 5 minutes.

Meanwhile in a small mixing bowl, whisk together 1/4 cup olive oil, Dijon mustard, honey, vinegar, garlic and salt and pepper.

In a large bowl combine green bean and onion mixture, tomatoes, bacon and dressing. Mix well. Cover and refrigerate for at least 30 minutes. Top with parmesan cheese when ready to serve.
