Ingredients
- 2 cups shredded coconut
- 1 cup finely chopped dates
- 1 cup finely chopped walnuts
- 1 cup sugar
- 1/4 tsp salt
- 2 beaten eggs
- 1 tsp vanilla
Preparation
Step 1
Combine ingredients in order given. Let stand at least 10-12 minutes. Drop onto parchment lined (or well greased and floured) baking sheet. Bake at 350F for 12-14 minutes. Using a 1 1/2 inch cookie scoop makes 32-34 cookies. Recipe can easily be halved for a smaller batch.
Note: Cookies will be very soft and moist when removed from the oven, firming as they cool.
