Cherry Crumb Cake, 10-inch Spring Form

Ingredients

  • 1 package (9-ounces) yellow cake mix -
  • 1/4 cup (1/2 stick; 2-ounces) butter or margarine chilled
  • 1 tablespoon milk
  • 1 can (21-ounces) cherry pie filling
  • Crumb Topping
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/8 cup packed brown sugar
  • 5 tablespoons butter cold

Preparation

Step 1

Cake: Preheat oven to 350 degrees F.

Grease a 10-inch spring form pan; set aside.

Pour cake mix into a medium bowl. Use a pastry blender to cut butter in until mixture resembles coarse crumbs. Sprinkle milk over mixture; toss with a fork until mixture binds together. Dough will be slightly sticky. Pat dough over bottom of prepared pan and 1" to 1 1/2" up sides. Spoon cherry pie filling into crust.

Crumb mixture: in medium bowl, blend oats, flour, and light brown sugar. Use a pastry blender to cut in butter until mixture resembles coarse crumbs. Sprinkle crumbs over cherry filling, covering completely.

To complete: bake 45 to 50 minutes or until top is golden brown.
Cool in pan on a wire rack. When cool, remove side of pan.
Yield: 1 cake.
