Sundried Tomato, Spinach & Cheese Stuffed Chicken Wraped in Bacon

Ingredients

  • 2 Lg chicken breasts
  • 3/4 c Kraft Sundried Tomato Vinaigrette Dressing & Marinade (Could substitute EVOO with salt & pepper)
  • 1/2 c Sundried tomatoes
  • 1/2 c roughly chopped fresh spinach
  • 1/2 c feta cheese
  • 1/2 c mozzarella cheese
  • 4 thick slices bacon

Preparation

Step 1

Marinade chicken breasts in dressing for a few hrs.

Preheat oven to 375.

With sharp knife, carefully cut chicken breasts like hot dog buns. Don't cut all the way through.

Combine all ingredients except bacon. Put 1/2 of this mixture into each chicken breast.

Line rimmed baking sheet with aluminum foil & set wire rack on top. Wrap each chicken breast with two slices of bacon, pulling bacon gently but tightly to help seal in contents of each chicken bundle as much as possible. Transfer bacon wrapped chicken breasts to wire rack.

Bake until bacon is golden brown & chicken is mostly cooked through about 45 min. Turn up heat to 450 & continue cooking until bacon is deep brown & crispy, 10-15 min.
