Ingredients

  • 2 t EVOO
  • 2 med zucchini, cut into 2 in chunks
  • 1 t dried oregano
  • 2 T chopped fresh parsley
  • 1/8 t salt or to taste
  • 1/8 t freshly ground black pepper or to taste
  • 1/8 c crumbled feta cheese

Preparation

Step 1

Heat oil in Lg skillet over med heat. Add zucchini & oregano; sauté until zucchini is golden brown about 4-6 min.

Remove skillet from neat & add parsley; toss to combine. Season to taste with salt & pepper.

Sprinkle with feta cheese over top just before serving.
