Penuche Frosting

Ingredients

  • 2 cups brown sugar
  • 1 cup granulated sugar
  • 2 tablespoons light corn syrup
  • 2 tablespoons (1/4 stick) butter
  • 2/3 cup heavy cream

Preparation

Step 1

Combine sugar, corn syrup, butter, and cream in heavy-bottomed saucepan. Cook over low heat, stirring until sugar melts. Cover and cook about 3 minutes low heat to prevent frosting from being granular.
Remove cover and cook to about 240 degrees F. or to "soft ball" stage.
Remove from heat and let cool to lukewarm.
Beat until thick enough to spread. Color will lighten and frosting will lose sheen.
If frosting becomes too thick, add droplets of cream.
Yield: Frosting and filling for 8-inch, 2-layer cake.
