Ingredients
- 1 can (14 3/4-ounces ) pink salmon
- 1 large egg, beaten
- 1 1/2 cups (more if needed ) *dry instant potatoe flakes
- salt and pepper
- 2/3 cup (enough for 1/2-inch up side of patties) vegetable oil
- Panko bread crumbs, for coating optional
Preparation
Step 1
* Bread crumbs of any kind will do.
Mix all the ingredients until patties hold together well, add more potato flakes until you have firm patties.
Should have about 8 patties, depending on size you make.
(I have rolled these in Panko bread crumbs for crispier salmon patties before frying.)
Have the vegetable oil at about 350 degrees F. (moderately hot) and place the patties in slowly or will pop hot oil.
Do not turn until well browned, about 5 minutes. They may fall apart if turned too soon. After turning cook about 4 minutes more until golden brown.
