Ingredients
- 1 box (8.5-ounce) corn muffin mix
- 1/2 cup flour
- 1 large egg
- 1/2 stick (2-ounces) butter, melted
- 1 cup (small can, drained) corn kernels
- 1/2 cup scallions, chopped
- Vegetable oil-enough to have 2-inches deep for frying
Preparation
Step 1
Whisk corn muffin mix and flour in a small bowl.
Whisk milk, egg and butter in larger separate bowl. Now add dry ingredients to wet ingredients. Next whisk corn and scallions into mix (add jalapenos now if used). Drop by tablespoons into 2-inches hot vegetable oil (365-degrees F.). Fry until golden.
