Pecan Brownies

Ingredients

  • 2 sticks (8-ounces plus extra for greasing) butter, unsalted
  • 2 1/2 ounces bittersweet chocolate
  • 1 cup (4 1/2-ounces) all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 ounce baking powder
  • 1/3 cup (2 1/2-ounces) pecans, toasted finely chopped
  • 1/2 cup (3 1/2-ounces) brown sugar
  • 1/2 teaspoon almond extract
  • 1 large egg
  • 1 teaspoon milk

Preparation

Step 1

1 Grease a large baking dish (8x8-inch; 9x9-inch) and line it with parchment paper or lightly butter pan.
2 Put the chocolate in a heatproof bowl set over a pan of gently simmering water and heat until it is melted. Meanwhile, sift together the flour, baking soda, and baking powder into a large bowl.
3 Finely chop the pecans and set aside. In a separate bowl, cream together the butter and sugar, then mix in the almond extract and the egg. Remove the chocolate from the heat and stir into the butter mixture. Add the flour mixture, milk, and chopped nuts to the bowl and stir until well combined.
4 Spoon the mixture into the prepared baking dish and smooth it. Transfer to a preheated oven, 350 degrees F, and cook for 30 minutes, or until firm to the touch (it should still be a little soft in the center). Remove from the oven and let cool completely. Cut into 20 squares and serve.
