ZUCCHINI BREAD

  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 6 tablespoons butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups shredded zucchini
  • 3/4 cup chopped walnuts (optional)

Preparation

Step 1

· In a medium bowl whisk together the flour, baking powder, baking soda, salt and cinnamon. · In a large bowl cream the butter, sugar, and eggs together with an electric mixer. Stir in the zucchini. Add the dry ingredients and stir just until combined. Fold in the chopped walnuts.
· Grease the Inner Pot with butter or cooking spray. Transfer the batter to the Inner Pot.
· Secure the lid and press the Cook button.
· Cook for 30 minutes.
· Flip the bread over by inverting the bread onto a plate and sliding it back into the pot.
· Cook for an additional 20 minutes.
· Serve warm with whipped butter.
