Ingredients
- 4 cups grated zucchini, drain off any excess moisture
- 3 cups flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 ground nutmeg
- 1 1/3 cups sugar
- 2 eggs, beaten
- 2 tsp vanilla
- 1/2 tsp salt
- 3/4 c margarine, melted
- 1 cup (100 grams) chopped pecans or walnuts (I put half and half)
- 1 cup (120 grams) dried cranberries or raisins

Preparation
Step 1
Whisk together flour, baking soda and spices in a large bowl. In a separate bowl, whisk together sugar, eggs, vanilla, salt. Stir in zucchini then melted butter. Add the dry ingredients to the wet ingredients. Fold in nuts and cranberries. Put into 2 – 5x9 greased loaf pans. Bake at 350º for 50 minutes. Cool in pan 10 minutes then turn out to finish cooling.
