Ingredients
- Garlic, peppers and herbs, to taste
- Olive oil
- 2 cups water
- 1 cup brown rice
- 1 cup broccoli, chopped
- 2 tbsp smooth or crunchy peanut butter
- 1 tbsp soy sauce
- 1 tbsp orange juice
Preparation
Step 1
In medium sauce pan, saute minced garlic and peppers in olive oil until soft, but not brown (about 10 minutes). Add water, bring to a boil, add rice and herbs, turn heat to low, cover and simmer (about 50 minutes) until most of water is absorbed. Add chopped broccoli and cover for a few minutes until broccoli is steamed. Mix peanut butter, soy sauce and orange juice over low heat in a small sauce pan until it thickens. Pour over broccoli and rice.
