Koriente Vegetable Salad with Rice & Tofu

Ingredients

  • Dressing:
  • 4 Carrots
  • 1/2 Cucumber
  • 1/4 Head of Red Cabbage
  • 1 Red Pepper
  • Handful of Baby Greens
  • 1 Cup of Brown Rice
  • 1 Block of Baked Tofu
  • 1 Part Siryachi (less if you don't want too spicy)
  • 1 Part Shoyu/soy sauce
  • 2 Part Sesame Oil
  • 1 tsp ginger paste
  • 1 tsp sugar

Preparation

Step 1

Cook Rice and let it cool.

Julienne Vegetables.

Mix Dressing.

On a small bed of cooled rice add some mixed greens, julienned vegetables, and pieces of baked tofu and a light amount of dressing.
