Peanut Butter-Chocolate Chip Muffins

Ingredients

  • 1-1/2 C flour
  • 1/3 C sugar
  • 2-1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 C chunky peanut butter
  • 2 Tbl butter
  • 2 eggs, beaten
  • 3/4 C milk
  • 3 oz semisweet chocolate chips

Preparation

Step 1

Preheat oven to 400 degrees.

In medium bowl, stir together flour, sugar, baking powder and salt. With 2 knives cut in peanut butter and butter until mixture resembles coarse crumbles.

In small bowl, combine the eggs and milk. Add to flour mixture, stir until moistened. Butter should be lumpy. Fold in chocolate chips.

Grease or line muffin cups. Fill 2/3 full and bake for 15-17 minutes or until lightly golden. Remove from muffing tin and cool on wire rack.

Can be stored at room temparature 2-3 days or 4 months in freezer.
