Chicken on a Cloud

Ingredients

  • 1/3 cup enriched flour
  • 2 tsp. salt
  • 1 and 1/2 tsp. ground sage
  • 1/4 tsp. pepper
  • 1 cut-up frying chicken
  • 1/4 cup fat
  • 1 cup sifted enriched flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 3 eggs, well beaten
  • 1 and 1/2 cups milk
  • 1/4 cup butter
  • 1/4 cup chopped parsley

Preparation

Step 1

Combine 1/3 cup flour, 2 tsp. salt, sage and pepper. Coat chicken with this mixture. Brown in hot fat. Place chicken in 2-quart casserole. Sift 1 cup flour, baking powder and 1 tsp. salt. Combine remaining ingredients in a separate bowl, then add to the dry ingredients; stir until smooth. Pour over chicken. Bake in 350° oven 1 hour or until tender.
