Ingredients
- Coriander Chicken
- Because cilantro is the leaf and coriander the seed of the same plant, either
- seasoning can be used in this recipe.
- 1 small (3- to 4-lb) chicken, cut into pieces
- 1 tbsp butter
- 4 tbsp olive oil
- 4 large cloves of garlic, crushed
- 1 tsp turmeric (or saffron)
- salt and freshly ground black pepper to taste
- 1 sprig of fresh cilantro, finely chopped (or 2 tsp ground coriander)
- 1 cup (or more) water
- 1/4 lb purple olives, pitted
- 1 lemon, sliced
Preparation
Step 1
Brown the chicken in butter and oil in a large heavy skillet over medium heat. Add
garlic, turmeric, salt, pepper, and cilantro. Cook about 10 minutes, turning chicken
occasionally to distribute sauce evenly. Stir in enough water to cover (about 1 cup),
and simmer over low heat until the chicken is tender, adding more water if necessary.
Add olives and lemon slices, and cook 8–10 more minutes, or until sauce is reduced
