Balsamic Sweet Pepper Pasta w/Spinach & Parmesan

Ingredients
- 1 pound mini sweet peppers
- 2 tsp olive oil
- 1/2 tsp salt
- 1/4 black pepper
- 3 tsp balsamic vinegar
- 12 oz pasta
- 1 1/2 vegan Parmesan cheese
- 2 cloves garlic, minced
- 2 cups baby spinach leaves
- 2 T chopped basil

Preparation
Step 1
1. Cut peppers into sliced rings. Heat large pan over medium head and add olive oil, sliced peppers, salt and pepper.
Separately, Saute peppers until tender and browned, about 15 min. Add the balsamic vinegar to the pan and cook for 3.5 minuites.
2. Cook pasta, drain. Add Parmesan cheese, garlic mixture, peppers and spinach to pasta.
