Ingredients
- 2 pounds carrots, small or organic
- 6 cups chicken broth or stock
- 1 large sweet onion, diced
- 3 cloves garlic, minced
- 1 T. olive oil
- 1 1/2 cups whole milk or yogurt
- minced cilantro or dill
Preparation
Step 1
Chop carrots and simmer in chicken broth, covered. In the meantime, saute onion in oil until translucent. Add garlic in the last 3 minutes. Add onion/garlic to carrots. Add minced cilantro when you add carrots and simmer 35 minutes or until tender. Place mixture in blender and puree. Stir in milk or yogurt.
If you prefer dill over cilantro, add after you have simmered and pureed the carrot mixture.
