Ingredients
- 2 carrots, diced
- 1 onion, diced
- 1 potato, diced
- 2 celery sticks, diced
- 2 tbsp. butter
- 2 garlic cloves, minced
- salt and pepper
- 1/4 c flour
- 2 c broth
- 8 oz cream cheese
- 1/2 c frozen peas
- cilantro
- 2 corn tortillas

Preparation
Step 1
preheat oven to 375 degrees.
add butter, garlic and onions to saute pan and cook until soft, then add carrots and potatoes, salt and pepper. cook 5 minutes, then add celery and cook additional 5 minutes. then add flour, broth and cream cheese to vegetables, cook until thickened, then add peas and cilantro and remove from heat.
grease 2 large ramekin dishes and distribute vegetables evenly. cover with a corn tortilla and paint with melted butter.
put dishes on a baking sheet and bake in oven for 20 minutes or until bubbling.
