Ingredients

  • Add spices - nutmeg, allspice, cinnamon, or ginger - according to taste, but in small quantities, about 1/8 teaspoon per potato.
  • 4 medium sweet potatoes or yams
  • butter
  • salt
  • spices (see above)
  • orange juice or milk (optional)

Step 1

Wash and peel the potatoes, put in a pot, and cover with cold water. Bring to a boila nd cook gently until tender, about 30 minutes; drain. Mash with a potato masher, put through a ricer, or whip in an electric mixer, adding butter, salt, and spices to taste. Add a few tablespoons of orange juice or milk, if you wish, especially if you are using light, dry sweet potatoes. Beat until smooth.
