Ingredients

  • 1 1/2 cup gently crushed corn tortilla chips
  • 4 –6 well-beaten eggs
  • 2/3 cup grated cheddar cheese
  • 1/2 cup of your favorite salsa
  • 1/2 cup chopped green onion
  • 2/3 cup frozen corn kernels
  • 1 can (6 to 7 oz) of diced hot green chilies

1. Preheat oven to 350°F.

2. In a small ovenproof skillet or casserole layer the following ingredients in this order: tortilla chips, eggs, cheddar cheese, salsa, green onion, corn, chilies. Bake 20 minutes.
