Cannellini Bean Spread

Ingredients

  • 1/4 cup olive oil
  • 3 garlic cloves, crushed
  • 1/2 tsp. crushed red pepper
  • 2 cups cannellini beans
  • juice of 1 lemon or more to taste
  • 1/8 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 1/2 tsp. ground pepper

Preparation

Step 1

Heat olive oil in small saucepan. Add crushed garlic and cook over low heat for 3 minutes. Remove from heat and add red pepper and let flavors meld for at least 30 minutes. Remove garlic from oil, and pile both garlic and beans in food processor. Process until smooth. With motor running add olive oil with pepper, lemon juice, and cayenne. Add salt and pepper and pulse to combine. Pack into a bowl and allow to sit at room temperature so that the flavors intensify. Drizzle with a little olive oil before serving.
