Ingredients
- 12 large eggs, hard boiled and peeled
- 1/2 cup mayonnaise
- 2 Tbs. finely minced pickled jalapenos, drained
- 1 Tbs. finely chopped chipotle chili in adobo sauce
- 1/2 tsp. Cajun spice blend
- salt to taste
- 1/4 tsp. hot smoked paprika
- Cajun spice blend
- 2 Tbs. chili powder
- 2 Tbs. paprika
- 1 Tbs. ground coriander
- 1 Tbs. garlic powder
- 1 Tbs. salt
- 1 Tbs. dried oregano
- 2 tsp. ground cumin
- 1 tsp. black pepper
- 1 tsp. cayenne pepper
- 1 tsp. crushed red pepper
Preparation
Step 1
Slice eggs in half and remove yolks. Press yolks through a fine mesh sieve into a bowl. Add mayonnaise and next 4 , stirring until blended. Spoon or pipe yolk mixture into egg whites
Cover and refrigerate at least 1 hour or overnight. Sprinkle with paprika and serve
