Quinoa Salad

Ingredients

  • Dressing:
  • 3/4 c dry quinoa
  • 1 1/2 c water
  • 1 c diced red pepper
  • 1 c canned black beans, drained and rinsed
  • 1 c frozen corn, thawed
  • 1/2 c diced red onion
  • 3 TBS cider vinegar
  • 2 TBS canola oil
  • 1 TBS sugar
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 tsp black papper
  • 1/3 c crumbled feta cheese

Preparation

Step 1

Cook quinoa in 1 1/2 c water according to package directions, omitting salt and oil if called for. Drain quinoa if necessary and cool.
In a large bow, combine red pepper, black beans, corn, onion and quinoa. Ina small jar with a tight lid combine oil, vinegar, sugar, garlic, salt and pepper. Shake very well.
Pour dressing over salad and toss. Add feta cheese and gently toss. Refrigerate at least 1 hour before serving. Tastes even better the 2nd day.
