Ingredients

  • For topping:
  • 100 g/3.5oz of self raising flour (17 syns)
  • 100 g3.5oz of blueberries (3 syns)
  • 100 g/3.5oz of fat free vanilla yoghurt
  • 1 egg
  • 1/4 C. of sweetener
  • 1 tsp. of cinnamon
  • Spray oil
  • 1 tsp. of cinnamon
  • 1 tsp. of brown sugar (1 syn)
  • Spray oil

Preparation

Step 1


1. Preheat oven to 350 F.
2. Grease 6 muffin cases with spray oil.
3. Place in a muffin/cupcake baking tray
4. Sieve the flour into a bowl.
5. Add the cinnamon.
6. In a separate bowl, mix together the egg, yoghurt and sweetener.
7. Fold into the flour.
8. Add the blueberries
9. Then spoon your mixture into the muffin cases.
10. Mix together the cinnamon and brown sugar
11. Sprinkle over the top with the brown sugar and cinnamon mixture .
12. Spray over the top of each muffin.
13. Bake in the oven for approx 30mins.
14. Cakes will be slightly golden on top, and a wooden skewer entered through the center will come out clean.
