Cream of Cauliflower Soup

Ingredients

  • 1 head cauliflower cut up into small pieces
  • 1/4 c. butter
  • 1/4 c. chopped onions
  • 2 T. flour
  • 2 c. chicken broth
  • 2 c. light cream
  • 1/2 t. Worcestershire sauce
  • 1/2 t. salt
  • 1 c. grated Velvetta cheese

Preparation

Step 1

Simmer cauliflower in water until tender. Drain, reserving 1 cup water. Saute onions in butter until tender. Add flour and then chicken broth, stirring constantly until mixture boils. Add cauliflower water, cream, Worcestershire sauce and salt. Next add cauliflower and cheese and continue to heat to boiling.
