Southwest Meatloaf

This makes really good sandwiches the next day if you throw a slice in a pan and cook it until it's crispy on the outside. Then I like to mix up some ketchup and southwest seasoning, put it all on a bun and chow down.

Ingredients
- 2 lb ground beef
- 1 cup soft bread crumbs
- 3/4 cup finely chopped onions
- 1/2 cup finely chopped red bell pepper
- 1/2 cup corn kernels
- 1/2 cup milk
- 1 egg
- 1 large clove of garlic, minced
- 2 tsp salt
- 1 1/2 tsp chili powder
- 1 tsp ground cumin
- 1/4 tsp pepper
- 1/2 cup thick and chunky salsa
Preparation
Step 1
Heat the oven to 350 degrees.
Combine all the ingredients except the salsa, mixing lightly but thoroughly.
Shape the beef mixture into a 10 x 4 loaf on a broiler pan and bake 1 hr 15 min or until the internal temp reaches 160 degrees.
Let it stand for 10 min, top with the salsa, and cut into slices.
