Spiced Pumpkin Cupcakes w/crm cheese frosting

Ingredients

  • Icing:
  • 1 box yellow cake mix
  • 1 sm. pkg. vanilla instant pudding
  • 1 c. canned pumpkin
  • 1/2 c. oil
  • 1/2 c. water
  • 3 eggs
  • 1 1/2 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 1 tsp. vanilla
  • 1 stick butter
  • 1 cream cheese
  • 4 c. powdered sugar
  • 2 tsp. vanilla

Preparation

Step 1

Beat all ingredients with electric mixer on low just until moistened. Beat on medium speed 2 minutes. Spoon into mini muffin cups or regular size muffin cups filling 2/3 full.

Bake at 350 for 10 min. for mini's or 20 min. for regular size.

Frost when cooled.
