Ingredients
- 3 small yellow squash
- 4 thick cut bacon slices, cooked , diced
- 1 c onion, chopped
- 1 tbs evoo
- 2 tbs bacon drippings
- 1 (29oz) can hominy, drained
- 4 c mushrooms, fresh, chopped
- 1 c chicken broth
- 1/2 tsp pepper
- 1 tsp grated lemon rind
- 2 tbs lemon juice
- 1/2 c parsley, fresh, chopped
- salt to taste
Preparation
Step 1
Cut squash length-wise and cut into 1/4 inch slices
Cook bacon, drain, cool and dice.
Reserve 2 tbs drippings.
Saute onions in drippings and evoo until tender.
Stir in hominy and saute 5 minutes, add mushrooms, broth, and pepper, reduce heat and cook 5 minutes or until mushrooms are dark. Add squash and cook until tender. Stir in lemon juice and rind. Cook uncovered until thickened slightly. Remove from heat, add parsley and bacon, salt to taste.
