Puff Pancake

Ingredients

  • 4 Tbl unsalted butter
  • 1/2 C milk
  • 1/2 C all purpose flour
  • 1/4 C granulated sugar
  • 2 large eggs
  • Pinch ground nutmeg
  • 2 Tbl confectioner's sugar

Preparation

Step 1

Preheat oven to 425 degrees.

In 10-inch ovenproof skillet, melt butter, tilting to coat sides.

Whisk milk, flour, granulated sugar, eggs and nutmeg in bowl. Pour into skillet, cook 1 minute.

Place skillet in oven and bake until puffed and golden, 12-15 minutes.

Serve immediately. Sprinkle with confectioner's sugar or serve with topping, if desired.
