Mini Meatloaf

Ingredients

  • Topping:
  • 1 lb ground beef
  • 1/4 - 1/2 cup onion, finely chopped
  • 1 egg
  • 1/2 can tomato soup
  • 1/2 cup bread crumbs
  • Seasonings of your choice (salt, pepper, garlic powder)
  • 2 tbsp ketchup
  • 2 tbsp tomato soup
  • 1-2 tsp mustard
  • pinch of brown sugar

Preparation

Step 1

Preheat oven to 350°F.

Spray pan with non stick spray.

Combine ground beef, onion, egg, soup, bread crumbs and seasonings in a large bowl with your hands. Once everything is thoroughly mixed, put mixture in a baking pan or in a cupcake pan.

Top with topping mix and bake for 45 minutes or until meat is no longer pink in the middle.

Refrigerate any leftovers.
