Bocconcini and Plum Tomatoes with Basil and Balsamic

Otherwise know as Insalata Caprese, this is a great summer salad or appetizer that's simple to make.

Ingredients

  • Fresh basil leaves (torn or cut into ribbons
  • Extra-virgin olive oil
  • balsamic vinegar
  • salt
  • freshly ground pepper
  • plums or grape tomatoes
  • bocconcini (fresh mozzarella)

Preparation

Step 1

Place the cheese, tomatoes and basil leaves randomly on a place (or decoratively if you wish). Drizzle with olive oil and then the balsamic vinegar. Season with salt and pepper to taste.
