Ingredients

  • 3 tablespoons olive oil
  • 4 cups sliced mushrooms
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 3/4 teaspoon salt
  • 3 cloves chopped garlic
  • 3 cans (8 oz each) tomato sauce
  • 3/4 teaspoon red pepper flakes
  • 1/2 pound cooked shells
  • 1/2 cup shredded ricotta salata

Preparation

Step 1

Heat 2 tbsp olive oil in a skillet over medium-high. Add mushrooms and cook 5 minutes. Push mushrooms to one side of skillet and add chicken. Season with 1/4 tsp salt and cook 7 minutes, turning after 4 minutes. Remove to a plate. Add 1 tbsp olive oil and garlic to skillet; cook 1 minute. Stir in sauce, pepper flakes and 1/2 tsp salt; simmer 2 minutes. Return chicken and mushrooms to skillet and heat through. Add shells and toss with sauce. Top with ricotta salata.
