  • 1 10oz package frozen, chopped spinach, thawed
  • 1/2 cup crumbled feta
  • 1/4 cup minced onion
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 2 eggs
  • 1 sheet frozen puff pastry, thawed

Step 1

1. Grease standard 12-cup muffin pan & preheat oven to 350.
2. Using your hands, squeeze thawed spinach until dry, forcing out as much water as possible.
3. Mix spinach through garlic in a medium bowl.
4. Season spinach mixture to taste with salt and pepper.
5. In a small bowl, beat one egg and fold into spinach mixture.
6. Cut puff pastry into three strips and cut each strip into four equal squares. Place a square in each muffin cup, pressing into the bottom and up sides, leaving corners pointing up.
7. Divide filling amongst cups and fold pasty over filling, pressing corners together to meet in the center.
8. Beat remaining egg and brush pastry with the egg wash.
9. Bake until pastry is golden and puffed, about 25 minutes.
