Ingredients
- 4 Tbsp. balsamic vinegar
- 4 Tbsp. Extra-virgin Olive oil
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 tomatoes, cut into 4 slices
- 2 2/3 pounds ground beef
- 2 Tbsp. tomato paste
- 1/2 cup chopped fresh basil, plus whole leaves for garnish
- 1/2 cup grated parmesan
- 1/2 tsp. pepper
- 2 cloves garlic, minced
- 8 oz. fresh mozzarella cheese, sliced
- 8 hamburger or ciabatta rolls, can be broiled as garlic bread
Preparation
Step 1
Arrange tomato slices in a single layer on a platter. Whisk together vinegar, oil, salt and 1/4 tsp. pepper in bowl. Pour over tomato slices. Let stand 15 minutes to an hour.
Mix beef, tomato paste, chopped basil, parmesan, garlic and 1/2 tsp. pepper in bowl. Divide into 8 burgers.
Grill burgers and top with mozzarella until cheese melts.
Serve on buns with marinated tomato slices and whole basil leaves.
