Ingredients

  • ICING:
  • 3 ¼ cups flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • ¾ cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 egg whites
  • 1 tsp. lemon juice
  • 3 ½ cups icing sugar

Step 1

Sift flour, baking powder and salt in mixing bowl.

Beat butter with sugar until light and fluffy in a large bowl. Beat in eggs and vanilla. Stir in flour mixture, one third at a time, blending well to make a stiff dough. Chill several hours or overnight until firm enough to roll.

Roll out dough one quarter at a time, 1/8” thick on a lightly floured surface. Cut into desired shapes. Place 1 inch apart on cookie sheets. Bake in 350ºF oven for 10 minutes or until firm and lightly golden. Remove from sheets and cool on racks. Cool completely before icing.

ICING:
Beat egg whites and lemon juice until foamy in medium-sized bowl. Slowly beat in sugar, until icing stands in firm peaks and is stiff enough to hold a sharp line when cut through with a knife.
