Uncle Tony Sausage and Spinach Pie

Ingredients

  • 1 lb sweet Italian sausage (out of casing) chopped
  • 6 eggs
  • 2 10-oz packages frozen, chopped spinach thawed and well drained
  • 1 16-oz package chopped mozarrella
  • 2/3 cup ricotta
  • 1/2 t salt
  • 1/8 t pepper
  • 1/8 /t garlic powder
  • piecrust mix for 2 crust pie
  • 1 T water

Preparation

Step 1

In skillet, cook sausage until browned and chopped (10 minutes). Stir frequently and spoon off fat at end.

Reserve one egg yolk. In bowl, combine remaining eggs with sausage, spinach, mozarrella, ricotta, salt, and pepper. Set aside.

Prepare pastry. Spoon sausage mixture into pastry shell. Before placing second pastry layer on top, cut out small circle in center of top crust. Place pastry over filling. Cut slits in pastry top.

In small bowl combine reserved egg yolk with water. Brush top of pie with egg wash. Bake at 375 degrees for 1 hour and 15 minutes. Let pie stand 10 min. before serving. may refrigerate up to 2 days before serving.
