Corned Beef Hash with Roasted Vegetables

Ingredients
- 1 medium onion, cut into 3/4 inch cubes
- 1 small celery root, peeled, cut into 3/4 inch cubes
- 1 small turnip, peeled, cut into 3/4 inch cubes
- 1 large carrot, peeled, cut into 3/4 inch cubes
- 1/2 green bell pepper, cut into 3/4 inch cubes
- 1 tablespoon vegetable oil
- 6 small red-skinned potatoes
- 1 1/2 pounds cooked corned beef, coursely chopped
- 6 tablespoons butter, divided
- 2 teaspoons salt
- 8 large egges

Step 1
Preheat oven to 350 degrees. Place first six ingredients in large bowl, toss. Transfer to large rimmed baking dish. Sprinkle with salt and pepper. Roast until vegetables are soft, tossing occasionally, about 45 minutes. Do ahead Can be made 2 hours ahead. Let stand at room temperature.
Place potatoes in large saucepan. Cover with cold water. Boil until tender, about 18 minutes. Drain potatoes; cool slightly and peel. Transfer 2 potatoes to medium bowl; mash. Cut remaining 4 potatoes into 1/3 inch cubes.Place roasted vegetables, mashed potatoes, and corned beef in processor; pulse until very coarse puree forms. Transfer to large bowl. Add diced potatoes; mix to distribute evenly.
Form mixture into 8 equal portions (scant cup each). Form each portion into 1/2 inch thick patty. Do Ahead. Can be made 1 day ahead. Transfer to baking sheet. Cover and chill.
Preheat oven to 250 degrees. Melt 3 tablespoons butter in a heavy large skillet over medium heat. Add 4 patties to skillet. Cook until heated through and brown, about 4 minutes per side. Transfer to baking sheet andplace in oven to keep warm. Repeat with remaining 3 tablespoons of butter and patties.
Pour enough water into 2 large skillets to reach depth of 2 inches. Add 1 teaspoon salt top each; bring to a boil.Reduce heat to medium. Crack egges, 1 at a time, into simmering water, a total of 4 eggs per skillet. Cook unil whites are set but yolks are still soft about 4 minutes.
Place 1 patty onto each of 8 plates. Using slotted spoon, place 1 well drained egg atop each patty and serve.
