Creamy Broccoli Potato Soup

Ingredients

  • 6 c chicken broth
  • 1/4 tsp pepper
  • 2 cloves garlic, minced
  • 8 c broccoli, fresh, chopped
  • 3 large potatoes, sliced 1/4 inch thick
  • 1 large onion, thinly sliced
  • 1 3/4 c milk
  • 1/4 c grated Parmesan cheese

Preparation

Step 1

Mix broth, pepper, garlic, broccoli, potatoes and onion. Heat to boil. Reduce heat, cover and simmer for 15 minutes or until vegetables are tender.
Re.move from heat and blend in food processor until smooth, Return to pan.
stir in milk and cheese. Heat thoroughly.
