Wild Rice Soup

I like it with 1/2 c minced ham, 1/3 c finely shredded carrot, and 3 tbs chopped slivered almonds with rice and salt

Ingredients

  • 6 tbs butter
  • 1 tbs minced onion
  • 1/2 c flour
  • 3 c chicken broth
  • 2 c cooked wild rice
  • 1/2 tsp salt
  • 1 c half and half
  • 2 tbs dry sherry (optional)
  • Garnish with chopped parsley or chives

Preparation

Step 1

Melt butter and saute onion until tender. Blend in flour and gradually stir in broth. Cook, stirring constantly, until mixture comes to a boil, boil 1 minute. Reduce heat, stir in rice and salt. Heat for serving and garnish.
